Intranet Mail is easy with Snow Leopard Server.
Server Admin->server.domain.com->Settings->Services and verify the Mail service is checkmarked.
Then click the drop down flippy for the server to display the list of services.
Click Mail->Overview->Configure Mail Service..
A series of about 5 dialog boxes in a wizard style format appears.
The first is "Mail Service: General" --For intranet accounts to be able to send to the outside world, fill in the SMTP information provided by your Internet Service Provider.
No need for imap at this time. From this point, clicking "continue" in each successive box accepts the default values and should be all that is needed to set up email service on the server.
Clients
The rest of the setup takes place on the clients.
As users running Snow Leopard are added to the server, they will be presented with a dialog box prompting them to log out, so that services may be auto-configured when they log back in.
Manual setup
Manual setup on clients prior to 10.6 Snow Leopard is just like adding any mail account.
Mail->Preferences->Accounts.. then click the plus sign in the lower left corner. The email address is in <username>@<server name> format.
For the incoming mail server, the user name is just the user name, no @ or server information.
For outbound mail, checkmark the "Use Authentication" and fill in the user name and password.
Take the account online, and soon an email from the server administrator with information regarding other configured services arrives in the inbox.
